What are your policies and procedures on wine? (general)

how much do you spend on everyday drinking king wine? Min /max price?

What's your rules on special occasion wine? I have a very few expensive bottles ~£80 UK prices. They're quite new though, 2013 or 2014. Should I be saving these for years and years so they appreciate in quality and value? Or chuck them down my throat on Christmas day?
