Couldn't find a thread on Prague after 2011 so we're due some new advice. What's essential? What to avoid?

Apparently Kafka Museum and Communism Museum are both very good, but I'm mainly interested in beer. Are there key breweries to go to? Any really good tours? People have suggested going to Pilzen as a day trip, which I guess is a possibility.
