hi guys! i am cooking dinner for a pescetarian friend this evening.

i'm already pretty decided i want to make dauphinoise potatoes because i made a delicious little tray of them last week but i am unfortunately
stuck in the carnivore mind set of potatoes then you want your meat and three veg, i can't think of a 'main event' vegetable dish to go with the potatoes. i know i could do things like bean chilli/lasagne/quiches etc but as i said, i want something that goes with dauphinoise pots. i was considering making a cheesy vegetable pie with a nice shortcrust or puff pastry lid but i think that could make the whole dish a bit too creamy/rich and unhealthy.

if you want to suggest a fish dish please keep in mind we don't want this to be an expensive meal as times are hard y'all.

can anyone help me?
and if you just want to share your yummy veggie recipes even if they wont be any use to me (tonight anyway) that would be great too!
