things in recipes you always change

Always double the number of cloves of garlic.

Always either substitute coriander for flat leaf parsley (if it seems appropriate) or leave out the parsley altogether.

Always have to cook fish for much longer than stated in recipe. 2 minutes each side is fine if you're cooking 1/2 inch thick fillets, or you're cooking your fish on the surface of the sun, but I'm sick of eating fish that's raw in the middle.

Two foodie threads already this morning. Not sure if we can handle a third...
