As you know, I had 2 pet courgettes. Now, unfortunately they were brutally killed over the weekend by a car. Bloody car! The courgettes were awesome, here they are at 2 weeks old:

Anyway, I went and bought a whole courgette from Tesco yesterday to honour them. How would you cook them? I might roast I think?

Anyway, all suggestions welcome.
