FAO people who understand film and how it's shot and that

ok so you know how on stuff like eastenders, coronation street and even days of our lives, there's a certain film style? for now we'll call it 'looks shitty'.

examples:

but then on things like dawsons creek, they have this completely different film style like

is there a name for the different styles other than 'shitty' and 'polished'? also what is creating the differences, is it the cameras, the way it's shot, just the budget afforded to filming or what. I dont know shit about film. cheers.
