i always thought that freezing vegetables was fine and just a thing you do, so i chucked some remaining veg in the freezer before going on holiday.

the vegetables which were involved in this were as follows: some carrots - half a courgette - two thirds of a leek.

i realised beforehand that maybe the freezing of the courgette wouldn't work out brilliantly but thought i might as well give it a try like. i was absolutely convinced that the carrots would be FINE, i didn't even face the opportunity that they might *not* be fine, BUT THEY WEREN'T FINE.

i took all the veg out of the freezer the very evening that i returned from my holiday, and put one of the carrots in some kind of stew or something that i was making (i can't even remember what it was tbh) and it did have a bit of a weird texture, somewhere between spongy and soggy is the only way i can describe it, so i left the bits of carrot and just ate the other stuff.

HOWEVER, when i looked in the fridge the next afternoon sometimes, the carrots had all turned BROWN. DARK FUCKING BROWN.

i was pondering for a while how this could possibly be, because you buy frozen veg from the shop and that's fine, so why wouldn't this be?

and all of this has lead me to believe that maybe pocketmouse was right all along, and you shouldn't freeze things that aren't frozen. unless you want brown carrots.
