Vinyl --> MP3

Does anyone else do much of this? Obviously this is the only way I can listen to my vinyl stuff on MP3 so I use Cool Edit Pro to copy the vinyl slabs to 44.1khz 16-bit Waves.

However what do most people do from there? I'm tempted to apply a hard limiter to scrape off the little peaks before saving out as MP3s. Then I'm torn between space-hungry 320s or the compromise of 192s. Both actually sound good.

Or is Variable Bit Rate the best option from an analogue source?
