Best classical pieces found on cd/mp3?

From composers who's work was committed to paper rather than recorded in a studio. Basically it's easy to find the best work of Max Richter or Nils Frahm (or even Soundtrack composers like Einaudi), but there so many different versions of Mozart/Bach/Chopin that I don't know where to start. Which are the best recorded performances of these kind of composers?

I have a good compilation of Tchaikovsky's symphonies with Bernard Haitink, so more in that vein please.
